Ingredients

Basic Dough

  • 80g active sourdough starter
  • 260g lukewarm water
  • 370g bread flour
  • 8g fine sea salt

Step-by-Step Instructions

Step 1

Mix the sourdough starter and lukewarm water until mostly combined.

Add the bread flour and mix until no dry flour remains. Cover and let the dough rest for 30 minutes.

Add the salt and knead gently until fully incorporated.

Perform 3–4 sets of stretch and folds every 30 minutes to strengthen the dough.

Cover and let the dough bulk ferment until it increases by about 50–75% and becomes light and airy.

Grease a 12-cup muffin pan with butter or oil.

Divide the dough into 12 equal pieces (about 60g each).

Add your preferred flavorings if desired, then shape each piece into a smooth ball.

Place one dough ball into each muffin cup.

Cover and proof for 45–90 minutes, or until puffy.
